Cabbage and tomato soup

Delicious and nutritious, this recipe is quickly made and easy to do. A bit of spices are added to compliment the flavour of the cabbages.

Ingredients

  • 2 teaspoon of olive oil
  • 2 teaspoon of butter
  • 2 onions, minced
  • 1 garlic clove, minced
  • ½ teaspoon of corriander (optional)
  • ½ teaspoon of fennel seeds (optional)
  • ¼ teaspoon of cumin (optional)
  • 5 cups of cubed cabbages
  • 2 cups of fresh tomatoes
  • 4 cups of chicken broth
  • Salt and pepper to taste

Directions

  1. Melt butter with the oil in a pot.
  2. Add onions and garlic with the spices.
  3. Cook 5 minutes.
  4. Add cabbage, tomatoes, and broth.
  5. Bring to a boil over medium heat and simmer 25 minutes.
